1 ripe avocado
2 Tbsp raw cacao powder
Pinch of salt
Pinch of cayenne pepper (optional)
½ tsp vanilla extract
3 Tbsp water
1 Tbsp maple syrup
Use a high-power blender, food processor, or large bowl & immersion blender.
Add scooped avocado and all ingredients and blend until creamy.
Set aside until cool.
Lightly toast shredded coconut on the stovetop until just barely brown.
Add lime zest and stir well. Gently sprinkle on top of the pudding mixture prior to serving.
